Games that use dice and the dice themselves date all the way back to the Middle Eastern Crusades, but modern craps is approximately a century old. Current craps evolved from the old English game called Hazard. No one knows for certain the birth of the game, although Hazard is said to have been created by the Anglo, Sir William of Tyre, sometime in the 12th century. It is theorized that Sir William’s knights wagered on Hazard amid a blockade on the fortification Hazarth in 1125 AD. The title Hazard was derived from the fortress’s name.
Early French colonizers imported the game Hazard to Acadia. In the 1700s, when banished by the English, the French moved south and found refuge in southern Louisiana where they eventually became Cajuns. When they departed Acadia, they took their preferred game, Hazard, along. The Cajuns streamlined the game and made it fair mathematically. It is believed that the Cajuns altered the name to craps, which was acquired from the term for the non-winning throw of snake-eyes in the game of Hazard, referred to as "crabs."
From Louisiana, the game moved to the Mississippi scows and all over the nation. A good many think the dice builder John H. Winn as the creator of current craps. In the early 1900s, Winn assembled the current craps layout. He put in place the Do not Pass line so gamblers could wager on the dice to not win. Afterwords, he designed the boxes for Place bets and added the Big 6, Big 8, and Hardways.
